Mario Batali's Pizza Dough Recipe

Mario encourages me to become one with the dough

I never watched Mario Batali's show, Molto Mario, when it originally aired but I have been enjoying the reruns on the Cooking Channel network. The concept of the show revolves around Mario Batali cooking various regional specialties from throughout Italy with an intimate audience of three "friends". It's an informative show that doesn't take for granted the viewer's attention span and takes the time to explain the provenance and history of Italian cuisine.

As per our usual Sunday routine, I began my morning by reading the Sunday paper while simultaneously catching up on my favorite cooking shows that I had taped earlier in the week. I usually find a dish that catches my eye and appetite and then I'll spend the rest of the day learning how to make it. Today it was Molto Mario's pizza dough recipe. Pizza dough is something that I've never successfully learned how to execute but this recipe called for the addition of wine and honey which was new to me and so I decided to give it a go.

A splash of wine makes it all better

The Food Network website listed a recipe that was vastly different from the one that Mario recited on his show. I wasn't sure which one to follow so I figured why not take the opportunity to experiment and try both. The recipe from the show called for slightly more water, honey and wine, the sequence of adding the ingredients was different and there was a 15 minute resting period to allow the sponge to develop before adding the remaining flour. Interestingly enough, the recipe from the show resulted in a crust that was lighter, fluffier and in my opinion far superior.

The amount of flour your will need will vary between 3 and 3 1/2 cups depending on atmospheric conditions. For this recipe, I used 3 cups and I aerated the flour before scooping it into my measuring cup. Mario Batali's recipe also called for fresh yeast which I didn't have so I used active dry yeast instead.

MARIO BATALI'S PIZZA DOUGH RECIPE

3.375 tsp active dry yeast or 1 1/2 oz fresh yeast

1 cup warm tap water

2 TB honey

4 TB red wine

3 - 3.5 cups flour (I used King Arthur bread flour)

1 tsp salt

1 TB olive oil (to oil the bowl)

The sponge looks a lot like strawberry yogurt

Dissolve yeast in water. Mix until yeast is completely dissolved then add honey, salt and wine. Add 1 cup of the flour and mix with a wooden spoon to make a loose batter. Let the sponge sit for 15 minutes. Add 2 more cups of the flour and stir for 2 to 3 minutes to incorporate as much flour as possible. You may or may not need the additional 1/2 cup of flour but don't be afraid if the dough is a little sticky.

Bring the dough together by hand and turn out onto a floured board or marble surface. Knead 6 to 8 minutes, until you have made a firm, smooth dough. Place the dough in a lightly oiled bowl and cover with a towel. Set aside to rise for 45 minutes. Cut the dough into 2 pieces and set aside to rise for another 15 minutes.

Pizza stone - after use. Careful, this is very hot! Don't forget your oven mitts.

Heat oven to 500 degrees F and place oven rack on lowest level possible above the heat element. Place your pizza stone here and allow to warm for at least 15 minutes. This is a home pizza making trick I learned from my friend Doug Marello who makes the best pizza I've ever had.

Press out the dough into a circle. Mario suggested not using a rolling pin as this can flatten the texture too much. Place the disc onto a pizza peel covered with corn meal (this will allow a smooth transfer to your pizza stone). Brush dough with olive oil then cover with tomato sauce and your favorite toppings. I find that if you let the dough rise a little (about 10 minutes) before transferring to the oven, you get a fluffier texture. It took me a few tries to learn how to use the pizza peel as I wouldn't use enough corn meal and the dough would stick. Oh, well - nothing wrong with making a few calzones!

Pizza Margherita with Mushrooms

The end product was chewy and fluffy. You couldn't really taste the wine or the honey. And while the texture didn't have the crunch or toothinesss of a pizza from a true artisan pizzeria, it was far better than delivery pizza.

Here is my recipe for a basic tomato sauce.

1 14 oz can of San Marzano style tomatoes

1 clove minced garlic

1 tablespoon olive oil

1/4 tsp salt

1 tsp fresh oregano

crush tomatoes with your hand until nice and smooth, add remaining ingredients

A great way to spend a lazy Sunday afternoon!
